Carefully barrel fermented, this outstanding Chardonnay spent a period of 9 months on 40% new French oak. This wine displays characters of lemon curd, white peach and passionfruit.
Season: Cool and overcast conditions through January and February resulted in a leaner weight and style. These conditions allowed for excellent acid retention.
Food Ideas: Grilled Snapper, risotto and seafood paella.

An elegant and expressive wine demonstrating Margaret River’s claim as a world class Chardonnay region. It has poise and complexity on release and will benefit from careful bottle maturation.
Season: Exceptional ripening conditions for white wines with a consistent flavour development and a natural acid balance. The season finished cooler, resulting in clean, crisp and elegant white wines.
Food Ideas: Risotto with spring vegetables and cooked shellfish.
Debut Range
2015 Debut Chardonnay
Harvested at optimum ripeness, crushed, de-stemmed, must chilled and de-juiced. The juice was allowed to cold settle for 36 hours and subsequently racked off, upon which an aromatic yeast was introduced for fermentation. The ferment was halted early to aid in preserving the natural grape sugars and to add body and enhanced fruit character to the finished wine.
Palate: Clean, fresh palate displaying citrus and stone fruit characters. The texture and depth are typical of a cool climate West Australian Chardonnay and follows on with a long and crisp finish.
Food Ideas: Pan fried baby snapper, baked eggplant with tomato and basil.
