2009 Whispering Hill Mount Barker Shiraz

All fruit is harvested from our Whispering Hill vineyard that is situated on ancient granitic soils in the truly cool viticultural region of Mount Barker. The wine was vinified using a selected Shiraz yeast in open fermenters under closely controlled conditions. Two weeks after fermentation the wine was pressed directly into French oak barriques. During 12 months in oak the wine was minimally handled, fined using egg whites and bottled with minimal filtration.

Optimal Drinking: While delicious to drink young for its primary fruit characters, this wine will gain in complexity with cellaring for up to 15 years.
Season: Generally a mild growing season with excellent rainfall during spring. Moist conditions
promoted some vigour in the vineyard and the need for leaf plucking. Summer was dry and warm. A near perfect season for the Great Southern
Food Ideas: Perfect as an aperitif or with canapés, ricotta and basil frittatas, and roast hazelnut and artichoke dip.
Cheese Ideas: Fromage triple-crème, or truffled cheese such as Boschetto al Tartufo Bianchetto
