About this Wine
Appellation: Margaret River, Western Australia
Varietal/Vineyards: 62% Cabernet Sauvignon 33% Merlot 5% Petit Verdot
Harvested: April 2010
Closure: Stelvin Lux+
Season: A cooler vintage compared to the previous year. This cool turn during fruitset meant lower crop levels however Margaret River experienced perfect ripening
conditions during the summer. The cooling influence of the Indian Ocean, allowed complex flavours to develop while the warm days ripened the tannins.
Vinification: Picked at optimum ripeness from ‘The Scholar’ vineyard, the fruit is then destemmed but not crushed. Cold macerated with a moderate ferment, yeasts are
introduced to increase aromatics and texture. Following fermentation and extended maceration, the wine has been matured in new and old French oak barriques increasing texture. Margaret River cabernet and merlot were then assembled to achieve maximum complexity and aromas with the small addition of petit verdot.
Food Ideas: Rich red meats, casseroles and barbecues.
Cheese Ideas: Ripe cheese platters and mature hard cheddars.
